Method

1.In a wok, heat 2 teaspoons of the oil over high heat. Stir-fry chicken in 2 batches, for 2-3 minutes or until cooked. Transfer to a plate.
2.Add remaining oil to wok; stir-fry onion, garlic, ginger and chilli for 1-2 minutes or until onion softens. Return all chicken to wok with bean sprouts, fish sauce. juice and sugar. Stir-fry for 1-2 minutes more or until hot. Remove from heat.
3.Add basil and nuts; toss to combine. Serve at once with rice.

Omit basil, if liked. Use peanuts instead of cashews. You can use leftover basil on pizzas, in pasta dishes or in pesto.
