Method
1.Make satay sauce. Stir ingredients in a medium bowl until combined. Reserve 1 cup of the sauce.
2.Cut chicken in half crossways. Thread onto eight 23cm (9¼-inch) metal skewers, coat with remaining satay sauce.
3.Cook skewers on a heated oiled grill plate (or grill or barbecue) about 10 minutes or until cooked through.
4.Meanwhile, make chilli lime dressing. Place ingredients in a screw-top jar; shake well to combine.
5.Place onion and celery in a large bowl with remaining ingredients and the dressing; toss to combine. Season to taste.
6.Serve salad with skewers and reserved satay sauce for dipping.
If using bamboo skewers, wrap the ends in foil to prevent them from burning.
