Method
1.Soak noodles in boiling water in a large heatproof bowl for 1 minute; stir to separate strands, then drain. Return to bowl. Use kitchen scissors to snip noodles into short lengths.
2.Add mince, onion, carrot, zucchini and breadcrumbs to noodles; mix well. Shape into 12 patties.
3.Heat oil in a large frying pan over moderately high heat. Cook patties, in batches, for 3-4 minutes on each side or until cooked.
4.Serve patties with Asian greens and sweet chilli sauce.
Process 1 slice of bread for 1/2 cup crumbs. Add grated lemon zest.
