1.Blanch beans in a saucepan of boiling water until bright green and crisp. Rinse under cold running water; drain well.
2.Preheat an oven-grill to high. Combine garlic and half the oil in a bowl. Lightly brush mixture over both sides of bread slices. Place bread on a baking tray. Grill for 2 minutes each side or until golden. Place remaining oil and vinegar in a bowl; season. Stir dressing to combine.
3.Divide lettuce among serving plates. Top with beans, chicken, egg, tomato and olives. Drizzle with dressing. Serve with toasted bread.

You’ll need a small French breadstick (baguette) or half a large one. Use skinless, boneless cooked chicken. Use cherry tomatoes instead of regular tomatoes. Price will vary. Make sure they’re not loaded with sugar: avoid ones with more than 10g sugars per 100g.
