Method
1.In a large saucepan combine stock, water, sherry, ginger, garlic and sugar. Heat on high until boiling. Reduce heat, simmer for 3 minutes.
2.Stir in chicken, mushrooms and corn. Season to taste. Simmer 5 minutes.
3.Add bok choy, onions and chilli. Simmer 1 minute. Serve immediately with a drizzle of soy sauce, if desired. Top with shredded green onion.
Canned creamed can be used for a different flavour and texture.
