Method
1.Dust chicken in flour, shaking off excess. Heat 2 tablespoons oil in a large, deep saucepan. Fry drumsticks in 2 batches, for 4-5 minutes, turning until golden. Transfer to a plate.
2.Heat remaining oil in same pan and saute onion and capsicum for 5-6 minutes, until onion is golden and tender.
3.Return chicken to pan. Pour over sauce. Half fill jar with water, rinse and add to pan. Bring to the boil, stirring. Reduce heat to low and simmer, covered for 25-30 minutes, until chicken is cooked through.
4.Stir in beans and simmer for a further 2-3 minutes. Serve with cooked rice or pasta.
If you have parsley, sprinkle liberally over the dish at the end of cooking.
