Method
1.Slit each chicken breast in a few places and push in garlic slices. Brush with oil and season to taste.
2.Heat a greased char-grill or barbecue on high. Cook chicken for 4-5 minutes, brushing with maple syrup, until cooked through.
3.Combine all salsa ingredients in a bowl. Set aside. Serve chicken on mashed potato. Serve with salsa and beans. Drizzle with extra maple syrup it desired.
If preferred, sear the chicken on both sides then place on a baking tray and bake at 180°C for 10-15 minutes to cook through.
