Method
1.Preheat a sandwich press or a medium non-stick frying pan over moderate heat.
2.Spray one side of 4 tortillas with oil. Place tortillas, oiled-side down, on a flat surface. Spread oyster sauce evenly over tortillas. Top with chicken, carrot, coriander, onion and cheese. Top with remaining tortillas. Spray tortillas with oil.
3.Toast in press or frying pan for 2-3 minutes or until tortillas are crisp and golden and cheese is melted. Cut into wedges; serve at once.
Once opened, store oyster sauce in the fridge. For a nutty flavour, sprinkle filling with toasted sesame seeds. if cooking quesadillas in a frying pan, gently press down with on egg lifter during cooking.
