Chicken and hummus burger

These tender Middle Eastern spiced chicken burgers are absolutely delicious served on toasted fluffy turkish rolls, smothered with rich, creamy hommus and topped with fresh veggies.

Method

1.In a medium bowl, combine chicken mince, breadcrumbs, fresh herbs, onion, lemon zest and coriander. Season to taste. Shape into 4 equal-sized patties. Arrange on a tray. Chill 30 minutes.
2.Heat oil in a large frying pan on medium. Cook patties 5-6 minutes each side, until golden and cooked through. Drain on paper towel.
3.Toast or char-grill rolls. Spread both halves of each roll with hummus. Place rocket, patty and tomato on one half of each roll. Finish with remaining halves. Accompany burgers with extra hummus, if desired.

Try using lamb or even turkey mince in place of chicken mince. Caramelised onion and beetroot make a delicious addition to the burger. Patties can be made ahead of time and frozen uncooked.
