Method
1.Preheat oven to 180°C/160°C fan forced. Cut bread into 2cm pieces. Place bread in a single layer on a baking tray. Bake bread for 10 minutes or until browned, turning halfway through cooking.
2.Combine chicken, mixed salad and tomato in a large serving bowl. Add bread and mix well.
3.Pour dressing over salad; toss to combine. Serve.
Buy loose mixed salad instead of a packet. Assemble salad just before serving. Leftovers? Use remaining sour dough bread stick for sandwiches.
