Method

1.Preheat oven to hot, 200°C. Lightly grease and flour 4 x 1 1/4-cup ovenproof souffle dishes, shaking out excess flour.
2.Arrange on an oven tray. Melt butter in a small saucepan. Add flour and cook, stirring, for 1 minute. Remove from heat. Stir in warm milk.
3.Return to heat. Cook, stirring, until sauce boils and thickens. Simmer for 3 minutes. Remove from heat. Stir in cheese, egg yolks, prosciutto and thyme.
4.Season to taste. Beat egg whites in a small bowl until soft peaks form. Fold into cheese mixture. Divide among dishes. Bake for 10-15 minutes, until puffed and golden. Serve with salad.
