Cheese and olive scrolls

Pull-apart cheesy scrolls are a hearty afternoon snack straight from the oven, or an ideal lunchbox addition.

Ingredients

Method

1.Preheat oven to 200°C. Lightly grease an 18 x 28cm slice pan.
2.Sift flour into a large bowl. Add butter. Rub in lightly using fingertips, until mixture resembles breadcrumbs.
3.Make a well in the centre of the flour mixture. Pour in milk all at once, reserving about 1 tablespoon. Using a butter knife, mix quickly to a soft, sticky dough. Do not over-mix.
4.Turn onto a lightly floured surface. Knead lightly. Press or roll out to form a rectangle about 1cm thick.
5.Spread dough with tomato paste. Sprinkle with cheese, olives and parsley, pressing down slightly.
6.Roll up to form a log. Cut into 2cm-thick slices and arrange close together, cut side up, in prepared pan.
7.Brush with reserved milk. Sprinkle with cheese. Bake for 25-30 minutes, until golden. Cool on wire rack.

For a breakfast treat, scramble 6 eggs in a pan until just set. Cool. Roll up in dough with tomato paste and cheese, and bake as directed.
