Method
1.Preheat oven to hot, 200°C. Lightly grease an oven tray.
2.In a large frying pan, heat oil on high. Saute onions 4-5 minutes, until softened. Reduce heat. Blend in sugar and vinegar. Cook, stirring, 15-20 minutes until onion has caramelised.
3.Meanwhile, cut two 14cm circles from each pastry sheet. Prick bases with a fork. Place on prepared tray and brush with milk.
4.Bake 15-20 minutes, until golden and puffed. Press down bases with pack of spoon.
5.Melt butter in a frying pan on high. Saute mushrooms 4-5 minutes until tender.
6.Spread 1/4 cup caramelised onion on each tart. Top with combined mushrooms, feta, rocket and prosciutto. Serve drizzled with olive oil.
Arrange prosciutto slices on a tray. Grill 4-5 minutes, until crispy.
