Method
1.Preheat sandwich maker or press according to manufacturer’s instructions.
2.Spread 2 slices bread with tomato paste. Top with ham, cheese, capsicum and basil. Finish with second slice of bread.
3.Spray sandwich maker with cooking oil. Place jaffles in sandwich maker and close. Cook for 5-10 minutes, until golden. Serve with leaf salad.
For a tasty variation, top with tomato paste, 1/2 cup grated mozzarella, 1/2 sliced cabanossi stick, 1/4 cup chopped sun-dried tomatoes and 6 halved, pitted olives. Cook as above. Makes 2
