Method

1.Slice chicken in half through the centre. Cut each slice in half diagonally. Sprinkle with cajun seasoning.
2.Lightly spray a grill with oil and heat on high. Grill corn for 8 minutes, turning frequently, until cooked. Grill chicken for 2 minutes each side, until cooked through.
3.Remove kernels, mix with tomato, cucumber, oil and juice. Season. Serve chicken with salsa and coriander.

To speed up the cooking time, place corn in a plastic bag and cook in the microwave on high (1200W/100%) for 2 minutes. Cool slightly, remove carefully from bag and grill for 2-3 minutes.
