Method
Cajun chicken burgers
1.Preheat a barbecue grill on high.
2.Using a sharp knife, carefully cut the chicken in half horizontally. Cover with plastic wrap and pound with a rolling pin to an even thickness. Brush both sides with oil, then sprinkle with Cajun seasoning. Chill until required.
3.Cook the chicken for 2-3 minutes each side, until golden brown and cooked through. Toast the rolls on the barbecue plate at the same time.
4.Slice the chicken and serve with the coleslaw on the toasted rolls.

5.In a bowl, combine cabbage, carrot, snow pea sprouts and onion. In a jug, whisk the mayonnaise and lemon juice together. Toss through the vegetables.
Cajun seasoning is quite spicy, so go easy. Add sliced tomato and lettuce leaves tn the burgers, if liked. A little sweet chilli sauce is a nice addition.
