Butter chicken

Deliciously mild creamy butter chicken is the perfect mid-week meal. Rich and indulgent, this classic and comforting dish with naan bread is bound to be a new family favourite.

Ingredients

Method

1.Combine yoghurt, ginger, garlic and spices in a large bowl. Add chicken; stir until well combined. Cover with plastic food wrap; chill for 6 hours.
2.Heat oil in a medium heavy-based saucepan over moderately high heat. Cook undrained chicken for 2-3 minutes each side or until seared. Reduce heat.
3.Stir in puree and cream. Simmer, uncovered,for 15 minutes or until chicken is cooked.
4.Top chicken with coriander. Serve with rice and naan.

You’ll find garlic naan in the bread aisle of the supermarket. Microwave according to packet instructions.
