Method

1.Place tomato, parsley, juice and half the oil in a bowl. Season. Stir to combine.
2.Combine mince, egg, breadcrumbs, spice mix and 1/4 cup water in a bowl. Using damp hands, shape mixture into 6 patties.
3.Heat remaining oil in a frying pan over moderate heat. Cook patties for 10 minutes or until browned and cooked. Cut patties in half lengthwise.
4.Fold each piece of bread in half. Evenly spread hummus over bread. Top with patty halves and tomato parsley salsa. Fold to enclose filling. Serve.
