Broad beans and thyme

Broad beans are also known as fava beans. They are high in fibre and a good source of vitamin C and folate. This recipe is delicious, and would also be excellent with a good squeeze of lemon on top.

Method

1.Drop beans into medium saucepan of boiling water, return to the boil; drain. When beans are cool enough to handle, peel away grey-coloured outer shells.
2.Cook shallot and speck in heated oiled large frying pan, stirring, until speck is browned lightly. Add beans and thyme; cook, stirring, until beans are heated through. Season to taste.

Speck is also known as cured pork. It is available from good delicatessens.
