1.Preheat oven to very hot, 230°C. Butter and flour eight 3/4-cup ramekins.
2.Cook broad beans in a saucepan of boiling, salted water 2 minutes; drain. Cool in ice-cold water; drain again. Remove and discard skins. Place broad beans and half the milk in a food processor; process until smooth.
3.Melt butter in a saucepan on medium heat. Add flour; cook, stirring, 1 minute. Whisk in remaining milk until smooth. Transfer to a large bowl. Whisk goat’s cheese and egg yolks through broad bean mixture ; season.
4.Using an electric beater, beat egg whites until firm peaks form. Gently fold egg whites through broad bean mixture. Spoon into prepared ramekins. Bake puffs 20-25 minutes, until risen and golden. Serve immediately.
