Braised tuna with sicilian olives

Ingredients

Method

1.Heat half of oil in a large frying pan on medium. Cook celery and onion for 10 minutes, until soft. Add bay leaves and sugar and cook for another 2 minutes, until sugar dissolves. Transfer vegetables to a bowl.
2.Season tuna with salt and pepper. Heat remaining oil in same pan on high. Cook tuna in batches for 1-2 minutes each side, until lightly browned. Return all tuna to pan and add onion mixture, vinegar, marsala and olives. Reduce heat to medium and simmer for 5-6 minutes, until sauce reduces slightly. Season to taste.
3.Divide tuna between serving plates, top with onion mixture. Serve with salad greens and crusty bread.

Look for tuna steaks that are around 2.5cm thick.
