Blue cheese, apple and rotisserie chicken slaw
1.In a large bowl, combine chicken, cheese, chives and cabbage.
2.Cut carrots and apple into matchstick-sized pieces, then toss through chicken mixture.
3.In a small frying pan, toss almonds on low for 2 minutes until golden. Add to chicken mixture.
Dressing
4.In a small bowl, whisk all the ingredients together. Season to taste.
5.Transfer slaw to a platter and drizzle with dressing. Season with freshly ground black pepper.
You will need a rotisserie chicken weighing around 900g.
