Method

1.Arrange berries, peach, pork, walnuts, spinach and rocket mix and onion on serving plates (or in a serving bowl).
2.To make the dressing; whisk all ingredients together in a small jug. Season to taste.
3.Drizzle dressing over salad just before serving, tossing well.

This can also be made with a combination of sliced stone fruit and other sliced cold Christmas meat. Make dressing in the screw top jar and chill any leftover for later use.
