1.In a bowl, combine butter, chilli and coriander. Tear a sheet of baking paper. Place butter at the centre of paper. Roll paper to form a 12cm-long log, twisting ends to enclose. Freeze for 15 minutes until firm.
2.Preheat a barbecue grill or char-grill pan to moderately high. Spray corn and kumara with oil. Cook for 10 minutes or until browned and tender. Thickly slice corn into rounds.
3.Season beef. Cook for 3 minutes each side for medium or until cooked to your liking. Cover with foil; rest for 5 minutes. Place vegetables on serving plates. Top with beef, butter and coriander leaves. Serve.
