Method

1.Heat a wok or large frying pan over high heat. Add 1 tablespoon oil; swirl to coat surface.
2.Stir-fry beef, in batches, 2 minutes each batch, or until browned and just cooked. Set aside.
3.Heat remaining oil in wok over moderately high heat. Add vegetables and ginger; stir-fry 2 minutes, or until vegetables are hot. Add water; cover and cook 1 minute, or until vegetables are just tender.
4.Add black bean sauce to wok; toss well to combine. Add beef to wok; toss until heated.
5.Serve with rice.
