Method
1.Preheat oven to 240°C or 220°C fan-forced. Pulse herbs and almonds in a food processor until fine. Season and mix well with olive oil in a bowl.
2.Spray a frying pan with cooking oil spray and heat on high. Sear beef on each side until browned. Remove from pan and cool slightly. Place in a roasting pan and spread with mustard. Press herb mixture over beef. Roast for 25 minutes for rare, 35 minutes for medium-rare or until cooked to your liking.
3.Place potatoes in a single layer in a large roasting pan. Sprinkle with salt and roast for 25 minutes, along with beef.
4.Cover beef loosely with foil and set aside to rest for 10 minutes before slicing. Serve with roast potatoes
