Beef fillet with chermoulla

This lean and tender baked eye fillet will literally melt in your mouth, while the herbs and spices that make up chermoulla are busy having a party there.

Ingredients

Method

1.Preheat oven to 200°C/180°C fan-forced.
2.In a large bowl, combine ingredients except beef.
3.Tie beef with kitchen string at 2cm intervals to keep its shape. Coat beef all over with chermoulla.
4.Place beef on oiled wire rack in baking dish. Roast, uncovered, 30 minutes or until cooked as desired. Cover; stand 10 minutes. Remove string and slice.
5.Serve beef with lemon wedges, if desired.
