Method
1.Preheat a char-grill or barbecue plate on medium.
2.Cook steaks 3-4 minutes each side for medium rare, or until cooked to your liking. Transfer to a large plate. Set aside, covered loosely with foil, 10 minutes. Thinly slice diagonally.
3.Remove corn kernels by running a sharp knife down the length of cob. Heat a saucepan of water on high. Add corn and cook 2-3 minutes, until tender. Drain and cool.
4.Thinly slice three-quarters of the capsicum, place into a large bowl. Roughly chop remaining capsicum and place in a food processor with mayonnaise and paprika. Process until a smooth, thick sauce forms. Season to taste.
5.Add spinach, corn and steak to capsicum. Toss until well combined. Serve salad drizzled with mayonnaise sauce.
You could use a 420g can of corn kernels or char-grill the cobs before removing the kernels.
