Method
1.Heat oil in a large deep frying pan on medium. Saute onion for 3-4 minutes, until tender. Add garlic and spices and cook a further 1 minute, until fragrant.
2.Stir in beans and tomato paste and cook, stirring, 1 minute. Add tomatoes, capsicum and mushrooms and bring to the boil. Reduce heat to low. Simmer 8-10 minutes, until thickened.
3.Spoon bean mixture onto warm tortillas. Top with mixed leaves and shredded cheese. Accompany with sour cream.
