2.Arrange mussels in disposable aluminium pan. Place on barbecue and cover. Cook, 5-6 minutes, until mussels open.
3.Meanwhile, combine butter, coriander, ginger and zest. Season to taste and mix well. Thinly spread half the butter on 1 side of each bread slice. Barbecue bread, 1-2 minutes each side, and limes on cut side until grill marks appear.
4.Add remaining butter mixture to mussels with lime juice, and stir through until melted and combined.
5.Serve mussels and pan juices sprinkled with onion and extra coriander leaves. Accompany with bread and limes.
