Method
1.Preheat oven to 200°C/400°F. Place 8 coliban potatoes on an oven tray; drizzle with olive oil. Roast 1 hour or until tender; season. Cool on tray 5 minutes.
2.Cut a cross in the potatoes; squeeze upwards from the bottom. Add baked beans and cheese. Season to taste. Bake further 5 minutes until cheese has melted. Top with fresh flat-leaf parsley leaves.
