Bacon and egg fried rice
1.Cook rice according to packet directions. Drain, refresh under cold water and place in a bowl. Chill for 1 hour.
2.Place a large non-stick wok on high heat and cook bacon, stirring, for 2-3 minutes. Remove from wok.
3.Make Dressing using the below method.
4.Reheat wok on high and cook egg, stirring, for 1 minute, until set. Add chilled rice, zucchini, cabbage and dressing, and cook, tossing, for 3-5 minutes. Remove from heat and add herbs. Season to taste and toss to combine. Serve with bacon.
