1.Preheat oven to hot, 200°C. Line a large, rimmed oven tray with baking paper.
2.In a large bowl, combine mince, carrot, onion, breadcrumbs, 2 chopped bacon rashers, egg, sauce and rosemary. Season to taste; mix well.
3.Arrange remaining bacon rashers in a row on tray, slightly overlapping. Spoon mince mixture down centre of bacon and shape into a 20cm log. Press cheese cubes evenly into mixture.
4.Fold bacon over and secure with toothpicks. Roll over, so seam side is facing down.
5.Bake 45-50 minutes, or until cooked through, basting halfway through with cooking juices. Loosely cover meatloaf with foil; rest 10 minutes.
6.Remove toothpicks and slice to serve. Accompany with salad and chips, if liked.
