Ingredients

60 gram piece parmesan cheese

1/2 cup (75g) drained and halved semi-dried tomatoes

200 gram baby rocket leaves

1/4 cup (40g) roasted pine nuts

1/4 cup balsamic vinegar

1/4 cup olive oil

Method

1.Using a vegetable peeler, shave parmesan cheese into long pieces.

2.Place cheese in large bowl with semi-dried tomatoes, rocket leaves, pine nuts, balsamic vinegar and olive oil; toss gently to combine.
