Method
1.Combine mustards, syrup and the juice in a medium bowl; add cutlets, turn to coat in mixture.
2.Cook the cutlets on a heated oiled barbecue (or grill or grill pan).
3.Meanwhile, make apple salad: Combine mayonnaise, mustard and juice in a medium bowl. Add apple, mix gently. Add lettuce and celery; toss gently. Sprinkle with nuts, season to taste.
4.Serve cutlets with salad.
