Method
1.Preheat the oven to 200°C (180°C fan-forced).
2.Place flat mushrooms in a large baking dish and drizzle with half the oil. Roast 10 minutes.
3.Add the remaining mushrooms, olive oil and garlic; roast for a further 15 minutes or until the mushrooms are tender and browned lightly. Stir in parsley, salt and pepper to taste.
This recipe is best cooked close to serving.
