Method
1.Preheat oven to 150°C. Line a large shallow baking dish with baking paper.
2.Cut each kumara half into 8 wedges lengthways; toss with remaining ingredients in a large bowl. Place in a baking dish. Roast for 1 hour or until vegetables are tender.
3.Increase oven temperature to 240°C. Roast 15 minutes or until vegetables are browned.
