Method
1.Cook lentils in large saucepan of water for 35 minutes, until tender. Drain.
2.Meanwhile, combine vinegar, mustard and olive oil in a small jug and season to taste.
3.Combine lentils, chicken, tomato, celery and parsley in a serving dish. Drizzle with dressing and toss to coat. Serve.
HEALTH TIP: Celery is low in kilojoules, with just 10 kJ per stalk, and it contains potassium and other compounds being studied for their potential benefits in lowering blood pressure
