Method
1.Preheat oven to moderate, 180°C. Lightly grease a 24cm round flan pan with removable base.
2.Line pan with pastry sheets, cutting and joining to fit. Trim edges and chill 15 minutes.
3.Bake 15 minutes, until puffed and lightly golden. Press down to flatten base.
4.In a food processor, combine cheeses, eggs, cream and zest. Process until smooth. Season to taste. Pour into tart shell, smoothing top. Sprinkle with pine nuts.
5.Bake 20-25 minutes, until filling is just set. Cool in pan 10 minutes. Serve warm or cold with salad.
