Method
1.In a large frying pan, melt butter on medium heat. Saute mushroom, onion and garlic for 5-6 minutes, or until tender. Add tomato paste and cook, stirring, 2-3 minutes.
2.Mix in chicken and stock. Cook on medium heat for 5-10 minutes, stirring, or until chicken is cooked through and liquid is reduced by half.
3.Stir sour cream through and simmer for 1-2 minutes, or until heated through. Season to tast.e Serve with pasta and sprinkle with parsley.
Cook pasta in a large saucepan of boiling, salted water, following packet instruction.
