Method
1.Trim steak of excess fat. Heat a hotplate, grill or heavy-based pan on high. Brush each side of steak lightly with oil. Place on hot plate.
2.Cook steak to seal, until moisture begins to pool on surface (a few minutes for medium depending on thickness). Turn only once.
3.Cook on second side until steak feels “springy” when pressed with the back of tongs. Never cut steak to check doneness.
4.Remove from hotplate or grill to a plate. Cover with foil. Allow to rest for 3-5 minutes. Serve steaks with mixed vegetables, accompanied by a little pesto sauce.
Rare steak feels “very soft”. For well done, continue cooking on a slightly reduced heat, until meat feels “very firm”.
