Method

1.Melt butter in a medium saucepan over moderate heat.
2.Add onion; cook, stirring, 7 minutes, or until golden. Add garlic and rice; cook, stirring, 1 minute.
3.Add stock; bring to the boil. Reduce heat to low; cover. Simmer 12 minutes, or until liquid is absorbed. Add peas; stir to combine. Remove pan from heat; stand 5 minutes (don’t lift lid).
4.Meanwhile, heat oil in a frying pan over high heat. Sprinkle cumin over beef. Cook steaks 30 seconds each side for medium, or until cooked to your liking.
5.Place yoghurt, juice, half the mint and water in a bowl; stir to combine.
6.Serve pilaf topped with beef, yoghurt mixture and remaining mint.
