1.Preheat a chargrill or heavy-based frying pan to high. Brush both sides of each steak lightly with oil.
2.Cook on grill or in pan to seal, for about 2 minutes, until moisture begins to pool on surface. Turn and cook second side for 1-2 minutes, until steak feels springy when touched with back of tongs.
3.Transfer to a plate and cover with foil. Rest 3-5 minutes. Meanwhile, toss remaining salad ingredients in a bowl. Slice steak across grain.
4.Make dressing by placing all ingredients and reserved oil in a screw-top jar, season to taste and shake. Toss through salad, add beef and combine. Serve with bread.
