Method
1.Heat butter and oil together in a large frying pan on medium until foaming.
2.Lightly season steaks to taste and add to pan with tomatoes. Cook steaks for 3-5 minutes, each side (until cooked to taste), turning once. Transfer to a plate with tomatoes. Cover loosely with foil and rest while preparing sauce.
3.To make sauce, wipe the pan with paper towel, then heat butter in pan on medium until melted. Saute onion and garlic for 2-3 minutes, until softened. Stir in sauces and cook, stirring, for 1 minute. Pour in cream and bring to boil. stirring. Reduce heat to low and simmer for 1-2 minutes, until thickened. Season to taste.
4.Melt extra butter in frying pan on medium. Add spinach and toss for 30 seconds, until just wilted. Serve steaks with sauce, spinach and tomatoes.
For a lighter version, use light evaporated milk, blended with 1 teaspoon cornflour, in place of cream. Simmer for 3 minutes, stirring.
