Ingredients

Method

1.Season both sides of steak with a good grinding of pepper and a little salt.
2.Melt half the butter in a large, heavy-based frying pan on high heat. When foaming and just starting to colour, add steak in batches; cook 3 minutes each side. Remove from pan and keep warm.
3.Add remaining butter, worcestershire sauce, garlic, parsley and chives. Swirl pan to mix sauce; simmer for a few seconds, adding a little more butter if you like.
4.Serve steaks whole or sliced with crispy potatoes and salad.
