Method
1.Preheat oven to 200°C. Line 2 baking trays with foil.
2.Squeeze out excess moisture from spinach. Combine spinach with half the ricotta and garlic. Arrange tortillas on trays and spread each evenly with spinach mixture.
3.Divide ham and tomatoes between each base. Sprinkle with remaining ricotta and mozzarella.
4.Bake 10-l2 minutes, until cheese melts and base is crispy. Serve topped with baby spinach leaves and a good grinding of black pepper, if you like.
