Method
1.Preheat oven to 180°C. Line a baking tray with baking paper. Place each chicken fillet between 2 pieces of baking paper and pound flat with a mallet or rolling pin.
2.Combine breadcrumbs, sesame seeds, parmesan and parsley in a shallow dish. Dust each chicken breast with flour, then dip into egg and coat in breadcrumb mixture. Cover and chill for 20 minutes.
3.Place schnitzel onto prepared tray. Bake for 30-35 minutes, until golden and cooked through.
4.Meanwhile, heat olive oil in a frying pan on medium. Add potatoes and cook for 3-5 minutes, until starting to colour. Stir in red onion and cook for another 3-5 minutes, until potatoes are golden and onion soft. Season to taste and serve with chicken schnitzel.
Use pork or veal schnitzel, if preferred.
