1.Preheat oven to hot, 200°C. Line an oven tray with baking paper. Lightly grease 4 x 1 1/2-cup ramekins.
2.Arrange pumpkin on tray. Drizzle with oil and season to taste. Bake for 20-25 minutes, until tender and golden.
3.Meanwhile, heat frying pan on medium. Spray with oil and cook sausages for 8-10 minutes, turning until brown and cooked through. Remove from pan and slice thinly.
4.In a large bowl, combine pasta, sauce, pumpkin, sausage, feta, capsicum, onion and garlic. Mix well and season to taste.
5.Spoon pasta mixture into ramekins. Bake for 10-15 minutes, until lightly golden. Serve topped with mint leaves.
You could spoon this into one large casserole dish and sprinkle with a little grated parmesan or tasty cheese before baking. A 400g can diced tomatoes could be used in place of the pasta sauce.
Note
