Method

1.Preheat oven to 200°C (180°C fan-forced). Grease a deep 24cm-diameter pie dish or oven-proof dish. Combine rice, melted butter and eggs in a medium bowl. Spread mixture over base of prepared pie dish.
2.Heat oil in a medium frying pan over moderate heat. Add leek; cook and stir for 5 minutes or until soft. Add garlic and spinach; cook and stir for 1 minute or until spinach wilts. Spread spinach mixture over rice; top with salmon and cheese.
3.Whisk cream and extra eggs in a medium jug. Pour cream mixture over pie. Bake for 20-25 minutes or until set and lightly browned. Stand for 5 minutes before serving.
4.Toss hot broccolini in extra butter. Season. Serve pie with broccolini.

You can use broccoli instead of broccolini. You’ll need to cook about 1/2 cup rice. Try tuna instead of salmon.
