Method
1.Combine salt and peppercorns in small bowl.
2.Score rind of pork, spray pork with oil. Rub pepper mixture over pork.
3.Place pork in deep disposable baking dish. Cook pork in covered barbecue, using indirect heat, following manufacturer’s instructions, about 1½ hours or until cooked. Remove from heat. Cover pork; stand 10 minutes before slicing.
